Gemlik Black Olive Oil Brine
Large sizes of Gemlik variety black olives, collected from our gardens in November-December, are selected. Our olives are stone pressed by simply adding salt and water. It is expected to shed its bitter water with salt water under stone pressure and to reach eating maturity by natural fermentation, and no intervention is made to speed up the process.
At the end of the natural ripening process, which takes approximately 6 months, the olives are dried and the bitter water in them is removed. After being ventilated for 1-2 days, it is packaged.

As it comes into contact with air, its color begins to darken and turn black over time. You can taste a slight bitterness due to the effect of the health-beneficial phenolic compounds contained in olives.
