    Edremit Green Scratched Olives

    Our Edremit variety green olives, collected from our gardens in September-October, are sorted in sifting machines, large sizes are selected and washed. After the drawing process is done, it is filled into olive tanks filled with water. It is fermented in brine containing salt and lemon juice to remove its bitterness through natural fermentation and is circulated every 15 days. No chemicals are used to speed up the process. Our naturally fermented green scratched olives complete their fermentation within 4-6 months in their natural process and reach eating maturity. It is packaged with boiled hot brine water to make it pasteurized and hygienic. Since no preservative chemicals are added to the brine, it is important not to touch the olives when buying them and to keep them in their own water. It may deteriorate quickly if touched by hand, exposed to air, etc.

    Let's keep our olives away from contact with heat, light and air. Let's keep it in its own water, with its mouth closed, in a dark, cool environment that is not humid, odor-free, and away from light.!!!
