    Edremit Green Crushed Olives

    Our Edremit variety green olives, collected from our gardens in September-October, are sorted, selected and washed in screening machines. After the crushing process is done, it is filled into olive tanks filled with water. It is fermented in brine containing salt and lemon juice to remove its bitterness through natural fermentation and is circulated every 15 days. No chemicals are used to speed up the process. Our naturally fermented green crushed olives complete their fermentation within 4-6 months in their natural process and reach eating maturity. It is packaged with boiled hot brine water to make it pasteurized and hygienic. Since no preservative chemicals are added to the brine, it is important not to touch the olives when buying them and to keep them in their own water. It may deteriorate quickly if touched by hand, exposed to air, etc.
